One of the hardest parts about working full time and trying to take care of the needs of your family is juggling all of the things that need to be done. There’s laundry to wash, groceries to buy, school assignments to keep on top of, bills to pay, checkbooks to balance, yards to clean up, and the list goes on. Another daily project is figuring out what to feed everyone and making sure all are eating well. It is no easy task, even when you’re not holding down a day job at the same time. And if you’re lucky, you don’t have a bunch of picky eaters to please.  One of my favorite dishes to make is a casserole. The beauty of a good casserole is that you can add healthy ingredients into it without your kids noticing. I just layer it with other favorite ingredients, toss it into a good ceramic set of bakeware and put it into the oven for an easy meal.
